Fluffy apple pancakes

These pancakes are a special weekend treat for my family and me. They are fluffy, sweet, and the caramelized walnuts give the right amount of crunch to them!

Step 1

Whisk together flour, some of the sugar, a pinch of salt, and baking powder.

  • 170 g all-purpose flour, 40 g sugar, 1 tsp baking powder, salt

Step 2

Juice lime. Heat lime juice and the remaining sugar in a frying pan over medium-low heat, stirring often. Once sugar has melted, add walnuts and continue to cook until nuts are caramelized, approx. 3 – 4 min. Remove from heat.

Step 3

Separate eggs and add egg whites to grease-free standing mixer. Set yolks aside. Beat egg whites on high until soft peaks form.

Step 4

In a large bowl, whisk together milk and egg yolks.

Step 5

Sift in flour mixture and mix well, making sure there are no lumps.

Step 6

Fold egg whites into the batter.

Step 7

Grate apple into the batter and add vanilla extract. Stir to combine.

Step 8

Heat some butter in a frying pan over medium heat. Spoon batter into frying pan and cook until golden brown (approx. 2 – 3 min. per side). Transfer to a plate to serve.

Step 9

To serve, top with caramelized walnuts and dried fruit. Drizzle on maple syrup and enjoy as a delightful breakfast!
